Crispy Squid with Harissa Mayonaise

Deep Fried Squid

 

500g plain flour

1 tsp cayenne pepper

1 tsp smoked paprika

1 tsp salt

1kg Squid cut into rings and tenticles

4 eggs, beaten

Sunflower oil

Chopped Flat Leaf Parsley

 

Harissa Mayonaise

 

2 clove of garlic

½  a jar of mayonnaise

3 tbsp harissa paste

 

Serves 12

 

1.For the mayonnaise crush the garlic and mix all the ingredients together and leave in the fridge.

 

2.Put enough oil in a large pan and heat the oil.

 

3.Put the flour, pepper, paprika and salt in a large bowl and mix and coat evenly.

 

4.Beat the egg and coat the squid, then place into the hot oil and fry for 2-3 minutes until golden.

 

5.Leave the squid to drain on some kitchen paper.

To serve: scatter chopped parsley over the squid, chunks of lemon and plenty of harissa mayonaise.
